Panetone is my favorite Christmas cake. Although it is an Italian dessert, we have also embraced it as an idea, that the characteristic Christmas cake is that.

But how did this dessert come about?

Panetone was born in Milan and its origins date back to the 14th century. Milan's traditional Panetone is longer, but there is also the short and wide variant, which is most prevalent in Piedmont. The typical Panetone of the Milanese tradition, which consists of its hand-cooking, is an oven product, with natural ingredients for the arrival of the dough and has a typical cylindrical shape taken from the "baking paper", which sticks until the product is finished. . The cake represents a soft texture and a typical aroma of fermenters like baking soda. The typical Panettone of the Milanese artisanal tradition is cooked with water, flour, butter, eggs (or just egg yolks), but can also be added to cut pieces of fresh fruit, orange peel or grapes.

How to make panetone yourself at home:

Ingredients:

1 kg of dried fruits mixed as grapes, cherries, oranges, plums, apricots, apples, etc.
1 glass of orange juice
1 glass of lemon juice
150 ml cognac or rum
250 gr melted butter

200 gr brown (or white) sugar
175 gr flour
100 gr thinly sliced ​​almonds
½ tablespoon baking powder
1 tablespoon cinnamon
1 tablespoon clove powder
4 large eggs
1 tablespoon vanilla extract

Preparation:

In a slow cooker pour the cognac or rum, butter, dried fruit and sugar, let simmer for 5 minutes. Then pour the resulting mass into a large bowl and allow to cool to room temperature for 30 minutes. Once the mixture has cooled, slowly add the flour, baking powder, lemon juice, orange juice, cinnamon, caraway, vanilla and eggs, mixing all the ingredients together until a soft, elastic flour is formed. Take a round bowl in the shape of a cake and grease it with butter and toss the dough. On top of the dough add the thinly sliced ​​almonds. Put the panetone to bake for 25 minutes at a temperature of 180 degrees.
